Guava - Lime Cheesecake

Jeg har tit tænkt på at bruge guava i i en dessert og nogle gange legede med en ideen  om guava cupcakes.  Jeg har været lidt bange for smagen forsvandt i bageværk, og derfor ikke udført ideen. De jeg var ud og handle sidste uge i den pakistanske grønthandle fik jeg øje på frisk guava, de duftede så godt men var ikke helt modent. Da slog det mig at det var en cheesecake jeg skulle bruge dem i. Jeg har legede med denne mango cheesecake opskrift, undlod hvid chokolade, men tilsatte lime. Da de friske guava ikke var helt modent fravalgte jeg dem og brugte dåse guava, til dels også pga af den lyserøde farve.  Hvis man kan få fat på friske modent guava vil jeg helt klart anbefale at man bruger dem, de dufter godt og smager af mere.
Jeg har brugt en tin muffin form og papir cupcake form til at lave portions guava - lime cheesecake. Det blev til 11 portions cheesecakes.


English: I have often thaught about useing guava in a dessert and played with the idea of a guava cupcake. But I have uncertain about if the tast will ramain in bakery and therefor not executed my idea.  Last week shoping in the pakistani grocery shop I saw fresh gauvas, the had such a lovly fragnace and there it hit me, cheesecake is what i needed to make with guavas. I played with this mango cheesecake recipe, left out the chocolate and added lime.  As the fresh guava were still ripe and I also wanted the pink guava, I choose to use canned ones. But I highly recommend fresh ones if you can find sweet mature guavas as they have more taste and fragrance.
I used muffin tin pan to make portion sized cheesecakes,  the mixture gave 11 portions sized cheesecake.  You will also be needing muffin/cupcake paper cases.

INGREDIENSER/ INGREDIENTS
Bund/Crust
125 gr kiks /125 digestives crakers or cookies
50 gr smør /50 gr butter
1 spsk sukker /1 tbs suger
revet skal af 1 lime /zest from 1 lime

Fyld/Filling
250 gr flødeost /250 cremecheese
3 æg / 3 eggs
100 gr sukker / 100 sugar
revet skal af 1 lime /zest from 1 lime
saft af 1 lime / juice from 1 lime
1 spsk mel / 1 tbs flour
200 gr guava puré, se nedenunder / 200 gr guava puree, scroll down 

Topping/Topping
2o0 gr guava puré /  200 gr guava puree

For at lave guava puré både til fyld og topping brugte jeg 2 dåser guava.  Dræn væsken fra og fjern kernerne. 

To make the guava puree both for the filling and the topping drain the drain the liquid from the canned guavas and remove the seeds.

Blend guava frugterne til en fin puré i en blender eller food processor.

Use a blender or a food processor to make a very fine puree.

Til bunden, fint purere kiksene i blender sammen med lime skal og sukker. Smelt smør og bland det i kikse blandingen.

I used my food processor/ blender to chop the digestive very fine with the sugar and lime zest.  Melt the burrer and mix in.

Kom papirs formene i muffin tin formen.  og fordel kikse blanding i dem. Tryk med fingerne for at få en jævn bund.  Bage bundende i 5-7 minutter i 170 grader forvarmet ovn.

Fill the tin muffin pan with cupcake cases and fill each with the digestive mixture. Press with your finde to make the crust even. Bake the crust 5- 7 minuts in a 170 degree celcius preheated oven.

Til fyldet pisk flødeost, sukker, mel og æg sammen, tilsæt 200 gr guave puré, lime saft og lime skal. Bland alt godt og fylde formene, lige op ca ½ cm fra kanten. 

 For at bage i vandbad: fyld en dyb ovn bakke med varm vand ca op til midten og læg muffin tin formen i. Bag i 150 gr forvarmet ovn ca 30- 40 minutter. Cheesecakene skal være fast i kanterne og lidt blødt i midten.  Afkøl og stil i kølskabet ca 1 times tid. Cheesecakene skal forblive i muffin tin formen.

To make the filing , whip together, creamcheese, sugar, flour and eggs, add 200 gr guava puree, lime juice and lime zest. Mix well and fill the cases up to ½ cm from the edge.

To bake in waterbath: fill a deep oven dish with warm water just up to idlle, place the filled muffin tin in the oven dish and bake for almost 30-40 minuts in 150 degree celcius preheated oven. The cheesecake edges should be firm and in middle the cheesecakes should be soft. Cool and place in fridge for an hour or so. Dont remove them from the muffin pan yet.

Når cheesecakene er afkølet helt,  fordel resten af guava pureen på dem med en ske eller smør kniv, mens cheesecakene stædigvæk er i muffin tin formen. Stilles til afkøling i kølskabet natten oven eller 4 - 5 timer forsat i muffin tin formen.

When the chesecakes are all cooled, spread the rest of the guava puree on them with a spoon or buttering knife while the still are in the muffin tin pan.  Place the muffin tin form in fridge again for overnigth of last 4-5 hours.

Jeg dekorerede mine Guava - Lime Cheesecake med spiseligt sølv blade og mere lime skal. De tages forsigtig ud af muffin tin formen og cupcake papir form fjernes forsigitg inden servering. De smagte super lækkert lige del guava og lime, jeg kunne dog godt tænke mig næste gang at de smagte  lidt mere af guava end af lime så fremover vil jeg bruge måske kun saft af ½ lime og mindre skal også.  hvad synes I? Den her bliver også af en af mine favorit cheesecake kan jeg mærke  :) Godweekend min kære foodies.

I deorated mine Guava - Lime Cheesecake with edible silver leaves and more lime zest.  Remove them fro the muffin tin case and carefully also remove the paper cupcake cases before serving. They were very scrumptious and full of taste, both lime and guava could be tasted. Next time I will try making them with less lime and lime zest as i would like them to taset just a bit more of guava. So what do you think? I can feel this is also going to be one of my favorite cheesecakes :)  Happy Weekend my dear foodies.

Kebab wraps

Igår var " spring hvor gærdet er lavest" mad dag hos os. 
Jeg købte kylling kebab fra den pakistanske grønthandler og flad brød fra den arbiske grønthandler ...... trylle trylle = lækker kebab wraps og lidt aloo chaat ved siden af. De her wraps er en ting mellem rolls og panini, simple men lækker.

Yesterday was "jump cut corners" food day at our place.  I bought chicken kebab from the pakistani grocery store and flat breads from the arabic grocery store ........ some kitchen magic later =  delicious kebab wraps with aloo chaat on the side. Indgredienser til aloo chaat / Ingrediens for aloo chaat

250 yoghurt, evt tyrkisk / 250 gr thick yoghurt
240 gr kogte kikærter/ 240 boiled chickpeas
200 gr kogte kartofler, skåret i små terninger/ 200 gr boiled potaotoes, diced
2 mellem store løg, fint hakket / 2 medium sized onion , finelly chopped
2 spsk hakket frisk koriander / 2 tbs chopped fresh koriander
100 gr agurk, i terninger / 100 gr cucumber , diced
1 spsk tamarind sauce / 1 tbs tamarind sauce
grøn chilisauce , efter smag / green chili sauce , to you taste
1 tsk salt / 1 tsp salt
1 tsk rød chili pulver / 1 tsp red chili powder

evt nogle hjerte salat blade / some salad leaves

Bland yoghurten med krydderierne og begge saucen, tilsæt resten og serve det på hjertesalat blade.

Mix the yoghurt with the spices and both the sauces , then add the rest and mix well. serc aloo chaat on the salad leaves.

Indgredienser  til warps / Ingredients for wraps
2 personer,  2 wrap pr person / 2 person , 2 wraps each

4 kebab /4 kebabs
4 flad brød / 4 flat bread 
2 rød løg, skåret i tynde strimler / 2 red onions , sliced and cutted
frisk mozarella , skåret i skiver / slices of fresh mozarella
en lille bundt frisk mynte blade / a little bunch of fresh mint leaves
frisk koriander blade / fresh coriander leaves
grøn chili sauce / green chili suace

Steg kebab i lidt oile.  Smør grøn chili sauce på en flad brød,  læg en kebab på brødet og kom masser af rødløg, skiver af mozzarella, mynte og koriander blade ovenpå.  Fold brødet om fyldet.  Lav alle wraps. Varm en pande. Læg den fyldte wrap med forsiden nederst, læg noget tung (som kan tåle lidt varme) oven på. Giv ca 2 -3 minutter på begge sider.  Gentag med resten af wraps.  Kebab wraps nydes varm med den kolde lækker aloo chat ved siden af.

Fry the kebabs in a little oil. Spread green chili sauce on a flat bread, place a kebab on the bread, add lots of redonion, slices of mozarella, mint and koriander leaves.  Wrap the fla bread around the filling. Make all the wraps. Heat a pan and place the upperside of the wrap facing down. Place something (heat proofed) heavy on it. It wil be needing  2-3 minuts on both sides.  repeat with rest of the wraps. Enjoy your wraps hot with cold aloo chaat on the side.
